Tis the Season

For engagements, social gatherings, fun family time, eating food you say you'll only eat during the holidays and lots of holiday cheer in your cups.  I was asked to write a guest blog post today for Fit Chic Tuesday. Green Holiday Pasta

Ok, so I love pasta any time of the year but get bored with the same old tomato sauce or olive oil. When I came across this creamy avocado sauce on TWO different blogs that I follow, I knew it must be made in my kitchen next! Of course I had to spice it up a bit so here's my twist!

INGREDIENTS
(Serves 2)
  • 8 oz pasta of your choice (I used Quinoa shells)
  • 1 red bell pepper, chopped & set aside
  • 18 asparagus, cut into 2-3 inch pieces
  • 1 ripe avocado
  • 2 cloves of garlic
  • 1 cup raw almond milk
  • The juice of half a small lemon
  • ¼ tsp sea salt, or to taste
  • ¼ tsp black pepper, or to taste
  • Few dashes of Crushed Red Pepper..I say dash but I load it up..SPICY!!
  • handful of walnuts, chopped
INSTRUCTIONS
  1. Cook pasta according to instructions on package.
  2. While the pasta is boiling away, heat about a teaspoon of olive oil in a medium non stick pan over medium heat and cook asparagus for 2-3 minutes, until just tender. Remove from heat but leave in pan.
  3. Place avocado, garlic, almond milk, lemon juice, salt, pepper & red pepper flakes to the bowl of your food processor and process until smooth.
  4. When pasta is cooked, drain it and add it to the vegetables. Add avocado mixture and chopped walnuts and toss to combine.
  5. Eat it immediately because you won't want to wait.


I had my roomate test taste it as per usual. We agreed I used too much lemon which is why I say small lemon. This sauce is unlike any I have ever tried but I love it. This would be a great healthy way to start the Holiday Season gathered with friends, family and a glass of vino. Every one loves pasta but you don't have to worry about feeling bloated in your party dress because this sauce is so light you might feel like you've lost a few pounds :)
