Cinnamon Sticks & Stone Fruit

Sticks and stones may break my bones but my obsession with quinoa will not kill me!
Unlike other childhood breakfast items loaded with sugar and high fructose corn syrup that leave you feeling sluggish a few hours after eating and fill you up on calories but not nutrients...I am determined to make quinoa the new go-to breakfast item! I hope that I can empower just one person to wake up and see that you have the power to choose. Only you can control YOUR hands when they reach for that cereal box, frozen waffles, donuts, breakfast bar or sandwich...you have the power to start your day with natural energy and great tasting food without spending a lot of time or money!
This weeks breakfast was inspired by spring and all the yummy fruit including Peaches!!! I love, love, love peaches about as much as I love cinnamon.  Does this breakfast seem similar to my other quinoa breakfast. Yes, because it is pretty much the same. Oh, Quinoa your so versatile and paired with chia seeds woah watch out spring, I'm detoxing my way to summer!
So without further ado...
Burnetti's Cinnamon Sticks & Stone Fruit with Quinoa
1/2 cup quinoa
1/4 cup chia seeds , click the link and find out more about these powerhouse detoxing seeds.
1 cup almond milk (or dairy alternative)
1 cup water
2 cinnamon sticks
2 organic peaches, pit (stone) removed and sliced
1/4 cup slivered almonds
Directions: Rinse quinoa then add to saucepan with chia seeds, almond milk, water, cinnamon sticks and one peach. Bring to a boil then cover and simmer for 15 min or until liquid is absorbed. Let stand 5 min before serving.
Place in bowl top with remaining peaches, slivered almonds and cinnamon stick for garnish! If you need to cool it down add a little cold almond milk and enjoy Burnetti's breakfast cereal! By the way...this would be 2 breakfast servings for me!

P.S. I rather like the title of this post...hmm stone fruits. You like?!
Cheers,
Jamie
